A santoku knife is a Japanese-style knife that translates as “three virtues” or “three uses” and refers to the three types of cuts the knife is made for: slicing, dicing, and mincing. The blade has a flat cutting edge and the handle is in line with the top edge of the blade. The end of the blade has a rounded curve called a sheep’s foot, rather than a sharp point that’s more common with Western blades. Santoku knives are shorter, lighter, and thinner. Our santoku has a razor-sharp edge that makes it perfect for fine cuts, and particularly for cutting meat and fish into small pieces for stir-fry dishes or fajitas. Meanwhile, the contoured edge makes it ideal for chopping vegetables and the hammer pits helps keep food from sticking to the blade. Do you still use your serrated bread knives? Try the santoku, you’ll be impressed by it’s ability to slice bread.

Super sharp and good looking blade, but this handle???

This Damascus steel Santoku knife is very good, but it just misses being graded a home run. It passed my 'Can this cut an overly ripe and juicy home-grown tomato?' test with flying colors. I felt like I could easily slice that tomato into paper-thin pieces, so I tried to and yes, it did so with grace and style. The thing is, I am not sure that I can get used to this octagonal handle. I've never used a knife with a handle that contains really stark hard edges going around the handle where you grip it before. Compared to most of my other wooden-handled knives, the handle on this one is also a tad bit thinner around too. So, for right now I'm rating this knife four-stars. I'm hoping I'll get used to it and will update this review later if it wins me over.

Incredibly Sharp, but feels Incredibly Cheap

I want to absolutely love this knife. It looks beautiful and it's just stupid sharp. However, the blade is very thin, the knife is unbelievably light weight, and it feels very very cheap, like it's going to just snap in half at the handle with the slightest pressure.

So far, the knife is great, but the feel just really bothers me. Maybe these are supposed to be this way, but my other chef's knives I have are solid, and have a good weight to them, they feel like you could chuck it at a brick wall, and the brick wall would shatter… if you know what I mean.

    Good Looking Sharp Knife

This santoku knife is very attractive. The layers Damascus steel combined with the polished Hammer look really is beautiful. The handle is a little big for my taste but it is nice and there are no cracks for bacteria or anything to get into.
The knife arrived very well packed with a nice red velvet interior that would be great for a gift. The knife had a protective cover that came with it. There is a spelling mistake on it but that does not bother me as I will keeping the knife in my butcher block and do not need it. Also included was a polishing cloth and a certificate that it passed testing before being shipped out.
The knife came very sharp, and it is made of a good high hardness steel that should hold an edge very well.
I'm looking forward to many years of use with this knife and would recommend it at this price point to anybody. This is my initial review and I will update later if I have any change of opinions or the steel does not hold up as expected.

Great knife. As good as I could have hoped for.

I waited to write this review until I used it enough to be sure it was worth it. I cut 30 pounds of meat and can now say that yes, it is. It has stayed sharp after countless hand washing and a few hundred cuts. It looks nice and the handle is fancy (though I cut with blade as handle so I am not sure if it is nice in hand)

For Santoku purposes this is outstanding. I will be 100% sure to edit this if in the next so many months anything jarring happens.
